Transformation of the beans
Once they have arrived in Berne, the raw cocoa beans are quality-tested and thoroughly cleaned. They are then roasted, chopped into medium-sized pieces and separated from their shells. The proportions in which the broken beans are ultimately blended is a closely guarded production secret. This blend is ground into a fine, semi-fluid mixture, which solidifies upon cooling into cocoa mass.
